These sweetly spiced muffins are a tasty way to use up excess Halloween pumpkin!
Ingredients

225g plain flour

2 tsp baking powder

1 tbsp cinnamon

100g caster sugar

50g light brown soft sugar

200g pumpkin (peeled, deseeded and chopped into small chunks)

2 large eggs

125g butter (melted)
Directions
First create a pumpkin puree by boiling the pumpkin for 10 minutes, until it is tender, then drain and mash it and leave it to cool.
Preheat the oven to 200C/180C fan/gas 6, then line a 12 hole muffin tin with muffin cases.
In a large bowl, add the flour, both sugars, cinnamon and baking powder and mix together, breaking up any lumps of sugar with your fingers.
In a separate bowl, whisk together the pumpkin puree and the eggs, then, alongside the melted butter, add to the dry ingredients and combine.
Bake in the oven for 15 minutes until they’re golden and have risen nicely, then leave on a wire rack to cool down.
