Marinated organic lamb chops with a cooling minty raita taste delicious on a hot summer's day
Ingredients

300g full fat Greek yoghurt

½ cucumber, peeled, deseeded & finely chopped
-
1 garlic clove, finely chopped
-
½ tsp sea salt
-
1 tsp Steenburgs organic minty lamb rub

small handful fresh mint, finely chopped

Olive oil
-
4 organic lamb chops
-
2 tsp Steenburgs organic minty lamb rub
-
2 tbsp olive oil
-
Sea salt
For the raita
For the lamb chops
Directions
Rub the lamb chops with a little olive oil and sprinkle with the minty lamb rub on both sides. Leave in the fridge to marinate for at least an hour before cooking
Mix the raita ingredients together in a bowl, topping with the teaspoon of minty lamb rub and a swirl of olive oil. Refrigerate until needed.
Bring your barbecue or grill to a high heat. Remove the lamb from the fridge, sprinkle with sea salt and grill for 4-5 minutes each side and leave to rest covered in foil for 5 minutes
Serve with the chops with the raita, flatbreads and salad
