A Simple, Satisfying Stuffed Pepper Recipe
A nourishing, low-carb alternative that skips the grains but keeps all the flavour. Perfect for a wholesome midweek meal or a weekend treat.
To serve four (eight pepper halves), you’ll need:
🥩 400g Organic Beef Mince – we used Eversfield Organic’s grass-fed beef mince
🧅 1 finely diced onion
🍅 2 tbsp tomato purée
🥄 1 tbsp Cajun seasoning
🥄 1 tsp paprika
🥄 1 tsp ground cumin
🌶️ Chilli flakes – to your preferred heat level
🧂 Sea salt & freshly ground black pepper to taste
Method:

Preheat your oven to 200°C (fan).

In a pan, gently soften the onions in a little oil of your choice.

Add the organic beef mince and cook until browned.

Stir in the spices, tomato purée, and a dash of water. Simmer gently while you prepare the peppers.

Halve and deseed four large peppers. Lightly brush or spray with oil.

Spoon in the spiced beef mixture and place in the oven for 10 minutes.

Remove, top with cheese (if using), and return to the oven for a final 10 minutes until bubbling and golden.
We love to serve these with a cooling yoghurt drizzle—simply mix natural yoghurt with a touch of honey, cumin, paprika, and a pinch of salt and pepper.
