How To Store
Our smoked beef brisket joint is delivered fresh in an insulated box. They are butchered fresh to order and will arrive with a 9-day shelf life (including the day of delivery). We recommend for these to be stored below 4 degrees or alternatively, you can pop them in the freezer for up to 6 months.
Our Farms & Suppliers
We source our organic beef from our exclusive network of local Devon organic farms. The cows spend their days grazing freely on a wide variety of native grasses, wildflowers and herbs, roaming the fields and resting under the trees. In the winter, they are given homegrown, organic silage and hay to munch throughout the day. We support traditional British cattle breeds that benefit from natural, slow-growing lives and produce beautifully marbled beef. Our beef is then hung for at least 21 days to mature the flavour for tender, flavourful meat. This creates an exceptional flavour and soft texture that is second to none. From our own cured pastrami to slow-roasting joints, we are immensely proud of our organic, pasture-fed beef.

Ingredients:
- 1kg pre-smoked beef brisket
- 1 cup beef broth, water, or apple juice (for moisture)
- Optional: BBQ sauce or your preferred glaze

Preparation:
- Thaw if Necessary: If your pre-smoked brisket is frozen, thaw it in the refrigerator for 24-48 hours before reheating.
- Preheat the Oven: Preheat your oven to 150°C (300°F). This low temperature will help gently reheat the brisket without drying it out.

Prepare the Brisket for Reheating:
- Add Moisture: Place the brisket in a roasting tin or baking dish. Pour beef broth, water, or apple juice around the brisket. This will create steam and help keep the meat moist during reheating.
- Cover the Brisket: Cover the roasting tin tightly with aluminium foil. This traps steam and helps keep the brisket from drying out.

Reheat the Brisket:
- Heating Time: Reheat the brisket in the oven for about 1 to 1.5 hours. The internal temperature should reach 74°C (165°F). Check the temperature with a meat thermometer to ensure it’s heated through.

Optional Glaze or BBQ Sauce:
- Add BBQ Sauce: If you like, you can brush the brisket with BBQ sauce or your preferred glaze during the last 20 minutes of reheating. If using BBQ sauce, remove the foil for the last 20 minutes to allow the sauce to caramelise and become sticky.

Resting:
- Let It Rest: Once reheated, let the brisket rest, covered loosely with foil, for about 10-15 minutes. This helps redistribute the juices and makes slicing easier.

Slicing and Serving:
- Slice Against the Grain: Slice the brisket against the grain to ensure tenderness. Serve with your choice of sides or additional BBQ sauce if desired.
