Slow-Cooked Organic Beef Shin Rogan Josh

Slow cooked beef rogan josh, using our tender organic beef shin.

This hearty, aromatic Rogan Josh is the perfect way to showcase the deep flavour and tenderness of 500g Eversfield Organic Beef Shin. Slow-cooked to perfection, it’s ideal for warming winter dinners or sharing with family and friends.


Ingredients (Serves 4)

  • 500g Eversfield Organic Beef Shin, cut into 3–4cm chunks

  • 2 tbsp vegetable oil or ghee

  • 1 large onion, finely chopped

  • 3 garlic cloves, minced

  • 1-inch piece fresh ginger, grated

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 1 tsp turmeric

  • 2 tsp paprika

  • 1 tsp chili powder (adjust to taste)

  • 1 tsp ground cinnamon

  • 1 tsp ground cardamom

  • 1 tsp garam masala

  • 400g chopped tomatoes (fresh or tinned)

  • 200ml beef stock or water

  • 150ml plain yogurt or coconut milk (optional, for creaminess)

  • Salt and black pepper, to taste

  • Fresh coriander, to garnish

  • Steamed basmati rice or naan bread, to serve


Method

  1. Prepare the Beef: Pat the beef shin chunks dry and season generously with salt and pepper.

  2. Brown the Meat: Heat oil or ghee in a heavy-bottomed pan or casserole over medium-high heat. Brown the beef on all sides, then remove from the pan and set aside.

  3. Cook the Aromatics: In the same pan, fry the onions until golden and softened. Add garlic and ginger, cooking for 1–2 minutes until fragrant.

  4. Toast the Spices: Stir in cumin, coriander, turmeric, paprika, chili, cinnamon, and cardamom. Toast the spices for 1–2 minutes, releasing their aromas.

  5. Add Tomatoes and Stock: Mix in the chopped tomatoes and cook for 5 minutes. Return the beef to the pan and pour in the beef stock. Bring to a gentle simmer.

  6. Slow-Cook: Cover and cook on low heat for 2–3 hours, or until the beef shin is tender and easily pulls apart with a fork. Alternatively, cook in a preheated oven at 160°C (140°C fan) for the same duration.

  7. Finish with Yogurt or Coconut Milk: Stir in yogurt or coconut milk 15 minutes before serving, along with the garam masala. Adjust seasoning with salt and pepper.

  8. Serve: Garnish with fresh coriander and serve with steamed basmati rice, naan, or your favourite side.


Tips for the Perfect Rogan Josh:

  • Brown the beef in batches to avoid overcrowding, and deglaze the pan with a splash of stock to capture all the flavour.

  • For a richer sauce, simmer uncovered for the last 20 minutes to thicken.

  • Add vegetables like bell peppers or spinach in the final 15–20 minutes for extra colour and nutrition.
