Vegan Potato Salad
A super quick side for welcoming in the warmer weather – this potato salad is fresh and full of flavour, unlike many heavy, creamy potato salads. Thanks to Mr Organic for the delicious recipe!
200g steamed new potatoes
50g steamed leeks
1 tsp Mr Organic Egg Free Mayo
1 tsp lemon juice
2 tbsp water
Black pepper and salt, to taste
1 tsp extra virgin olive oil
Wash and cut the potatoes and leeks into small chunks
Steam the potatoes and leeks and let them cool – or use leftovers if you have them already!
Blend the rest of the ingredients to make the salad dressing, then mix well with the potatoes and leeks.
Serve with your choice of grilled or barbecue treats!
