Super quick to make and absolutely packed with delicious flavours, these are officially the best Beef Fajitas you will ever eat!

Ingredients

1 pack organic beef stir fry strips
1 onion, sliced
1 red pepper, sliced
2 vine tomatoes, halved then sliced
2 fresh chilli peppers (your choice of heat), sliced
2 tsp tomato puree
A handful of fresh coriander, roughly chopped
Sour cream
Flatbreads (1 or 2 per person)
2 tsp coconut oil

Directions

In a large pan on high heat add the coconut oil and tomato puree.
When hot, add in the organic beef stir-fry strips and vine tomatoes, toss to cover the contents of the pan in the juice.
After 4 minutes, turn the heat down to medium and add onion, pepper and chilli.
Stir well. Cook for a further 5 minutes.
Serve on top of fresh flatbreads, a dollop of sour cream then sprinkle with coriander leaves. Wrap it all up and enjoy!
