The Best Beef Fajitas Recipe
Super quick to make and absolutely packed with delicious flavours, these are officially the best Beef Fajitas you will ever eat!
1 onion, sliced
1 red pepper, sliced
2 vine tomatoes, halved then sliced
2 fresh chilli peppers (your choice of heat), sliced
2 tsp tomato puree
A handful of fresh coriander, roughly chopped
Flatbreads (1 or 2 per person)
2 tsp coconut oil
In a large pan on high heat add the coconut oil and tomato puree.
When hot, add in the organic beef fajita strips and vine tomatoes, toss to cover the contents of the pan in the juice.
After 4 minutes, turn the heat down to medium and add onion, pepper and chilli.
Stir well. Cook for a further 5 minutes.
Serve on top of fresh flatbreads, a dollop of sour cream then sprinkle with coriander leaves. Wrap it all up and enjoy!
