This recipe keeps things simple, classic, and seriously satisfying: a soft toasted brioche bun, crisp fresh salad, and a beautifully cooked brisket burger at the centre of it all.

Ingredients

For the salad

  • Handful of mixed leaves (rocket, baby gem, or spinach)
  • 1 small tomato, sliced
  • ¼ red onion, finely sliced
  • 2–3 slices gherkin (optional)

Optional extras

  • Cheese slice (if desired)
  • Mustard, ketchup, or homemade burger sauce

Method

1. Cook the brisket burgers

Take the burgers out of the fridge 10–15 minutes before cooking to bring them closer to room temperature.

Heat a grill pan, frying pan, or BBQ to medium-high heat.

Cook the burgers for 4–5 minutes per side, depending on your preferred doneness, turning once for a good crust.

If adding cheese, place it on top in the final minute of cooking and allow it to melt gently.

Once cooked, rest the burgers for a couple of minutes.


2. Toast the brioche buns

Lightly butter or brush the cut sides of the brioche buns with olive oil.

Toast in a hot pan or under the grill until golden and slightly crisp.

This step makes all the difference for texture and flavour.


3. Prepare the fresh salad

In a bowl, lightly toss the mixed leaves with a small drizzle of olive oil, a pinch of salt, and a squeeze of lemon (optional).

Keep it fresh and simple to balance the richness of the burger.


4. Build your burger

Start with the bottom brioche bun.

Add a layer of dressed salad leaves, followed by the organic brisket burger.

Top with tomato, red onion, and gherkins if using.

Finish with your choice of sauce and place the brioche lid on top.


Serve

Serve immediately while the burger is hot and juicy, paired with crispy fries or a simple side salad.
