Onion, Potato and Cheddar Soup Recipe
The combination of our organic potatoes, onions, and mature cheddar create a delightfully balanced, warming and hearty soup. Serve with hunks of crusty organic bread for an easy mid-week family meal.
Plus it's freezable, so you can make up a batch for a later date.
500g potato, unpeeled and chopped into rough cubes
500ml Vegetable broth
bunch spring onion, sliced + 1 for garnish
100g mature cheddar or vegetarian alternative, grated
Nutmeg sprinkle, + extra sprinkle to serve
Place the potatoes in a large pan with just enough water to cover them and add the crumbled stock cubes. Bring to the boil and cover for 4-5 minutes. Prepare the green onions and add to the boiling potatoes for another 4-5 minutes.
Take off the heat. Grate the cheese and add to the softened vegetables with nutmeg, salt and pepper. Blend until you reach the consistency you like, adding more hot water if needed. Serve scattered with extra grated cheddar, spring onions and nutmeg.
