Vegan Sandwich Recipe
This vegan sandwich filling is one of our favourites, full of delicious roasted Mediterranean style vegetables with herby basil pesto for a burst of flavour in every bite.
Place your sliced veggies in a roasting tin along with the olive oil, balsamic, dried basil and garlic, and season with salt and pepper.
Roast the vegetables on a medium heat for around 20-25 minutes until they are tender and starting to brown.
Lightly toast your sourdough and spread with vegan spread and vegan mayo (if you are using it).
Place a layer of baby spinach leave on the bottom slice of each of your sandwiches.
Layer the roasted veggies on top for each of the sandwiches, distributing them evenly then top with a generous dollop of vegan basil pesto and season to taste.
Close up your sandwiches with the other slice of sourdough and there you have it; an organic vegan sandwich!
If you're a vegetarian and want an extra touch to your sandwich, we recommend frying up some halloumi and layering it in there too.
