How To Cook
We Recommend:
-
Preheat the oven to 180°C (350°F).
- Season the lamb: Rub the lamb all over with olive oil, then season generously with salt, pepper, garlic, and rosemary
Roast the Lamb:
-
Place the lamb on a roasting rack in a roasting pan, fat side up. The rack allows the heat to circulate evenly around the meat.
-
Roast the lamb for about 20 minutes per 450g (1 lb), depending on your preferred level of doneness:
- Rare: 20 minutes per pound (55°C/130°F)
- Medium-rare: 25 minutes per pound (60°C/140°F)
- Medium: 30 minutes per pound (65°C/150°F)
- Well-done: 35 minutes per pound (70°C/160°F)
-
Use a meat thermometer to check the internal temperature at the thickest part of the roast to ensure it’s cooked to your liking
