Marrying sweet and salty flavours this salad is bright and refreshing, best enjoyed on a summer's day alongside some crusty sourdough bread.
Ingredients
Directions
Chop the beetroot and Medita into small cubes.
Make your dressing by mixing together the lemon juice, garlic, olive oil and salt and pepper.
In a bowl combine the beetroot, Medita, parsley and dressing in a bowl and toss until combined.
