How To Store
Our beef roasting joints are delivered fresh in insulated packaging and butchered to order, with a 9-day shelf life(including day of delivery). Store below 4°C or freeze for up to 6 months.
Our Farms & Suppliers
We source our organic beef from our trusted network of local Devon organic farms. Cattle graze freely on diverse pastures of native grasses, wildflowers and herbs, living slow, natural lives. During winter months, they are fed homegrown organic silage and hay. Traditional British breeds are selected for their ability to produce beautifully marbled beef, which is dry-aged for at least 21 days to develop depth of flavour and tenderness.
How To Cook – Our Recommendation
You’ll need:

3kg Organic Silverside Joint

Olive oil or melted butter
-
Sea salt & freshly ground black pepper

2 onions, halved
-
2 carrots, roughly chopped
-
2 garlic cloves, smashed
-
Fresh herbs (rosemary, thyme or bay)

500ml beef stock
Method:
-
Remove the joint from the fridge 1 hour before cooking.

Preheat the oven to 220°C (200°C fan).

Pat dry, rub with oil or butter, and season generously.

Place vegetables and herbs in a roasting tray and sit the joint on top.

Roast for 20 minutes to sear, then reduce oven to 160°C (140°C fan).

Add stock, cover loosely with foil and roast for:

20 mins per 500g for medium-rare

25 mins per 500g for medium

Rest for 30 minutes before carving against the grain.
